Against all odds

Hoping to win against an insurmountable force. Small chance of victory; a huge undertaking. The ‘odds’ or the bet would be that you would fail but even so, victory or success was the final intention. (Compare to Fly by the seat of one’s pants, Go to any length or Sweat it out.)

“We have several noodle restaurants in our small town.  Nevertheless, I decided to open my own against all odds of success.”
