Romantic interlude and the participants go their separate ways afterwards.  ‘Stand’ refers to having met a stranger, such as at a bar or somewhere, and had a sexual relation and than the two separated, probably never to see each other again, hence ‘one night’. Can also be used in non sexual circumstances such as doing some chore just one time in life.
