DEFINITION

Calm down. Ebb. Modify an emotional reaction. Refers to boiling water which vigorously churns like someone’s anger, so to reduce the excitement you can make it simmer with a lesser degree of heat, so this phrase suggests turning down one’s emotional reaction. (Compare to Settle down.)
